Cooking with olive oil is generally considered a good choice for people with PBC. It's a healthy fat that fits well within the Mediterranean diet, which is often recommended for PBC management.

The Mediterranean diet focuses on:

- Fruits and vegetables
- Whole grains
- Healthy fats like olive oil
- Lean proteins That said, it's still important to be mindful of overall fat intake. While olive oil is a healthier option compared to processed or saturated fats, moderation is key since the liver still has to process the fats you consume.

Avoiding greasy, fried, and heavily processed foods is recommended with PBC, so using olive oil for light cooking or as a dressing is a much better swap than cooking with butter or other less healthy fats.

As always, checking in with your healthcare provider or a dietitian is the best way to make sure your diet is tailored to your specific needs.
